Pink Hummus: 2 Ingredients and 5 minutes Beet Hummus Dip

My girlfriends and I visited Pinky’s by Vanderpump in Las Vegas, and we fell in love with the restaurant – the vibe, the greenery and when we ordered an appetizer with hummus, it arrived so beautifully!

And you know the power of pink! This beet hummus dip brings that same energy to your table, but without the travel (or cocktail menu).

I knew I had to replicate this back home on a bigger scale. I figured it out, not that it was really that difficult. All you need is a jar of beets and store-bought hummus, blend them together in your food processor and you’ve got the prettiest pink dip that looks like it took far more effort than it did. It also tastes a bit sweeter and I love beets! If you have beet root powder you could also add that to the basic hummus instead of beets in jars.

I love serving it with carrots and warm pita bread. It’s my go-to when a friend pops by, or when I want something colorful and fun to add to a snack board.
